When does it appear?
What does it do?
Does it support the intention?
Does it invite another bite?
Does it belong to the texture carrying it?
Does it remain after swallowing?
Does it need adjustment, or does it need to keep its edge?
Flavor is not the end of the work. It is the place where the cook receives information from the preparation and returns that information to the next experiment. That is how taste becomes method.
