Why do some chefs see hidden possibilities in everyday pantry staples that others completely overlook?
It can be tempting to think that some chefs simply have more ideas than others.
They look at an ordinary ingredient and immediately see possibilities. A jar of mustard, a stale piece of bread, a can of beans, a carrot, a bottle of vinegar. What appears familiar and limited to one cook becomes the starting point for several directions in another cook’s mind.
But that difference is rarely the result of genius alone. More often, it comes from habit.
A chef who works creatively with everyday ingredients is usually someone who has spent time looking beyond their most obvious uses. They read about ingredients, compare traditions, observe how other cooks handle them, taste unfamiliar preparations, ask questions, take notes, and test variations. They are not waiting for the ingredient to reveal itself. They are building a relationship with it.
Curiosity is the force that keeps that process moving.
The curious cook does not stop at, “I know what this is.” They ask, “What else can this do?” They may wonder how the ingredient behaves when dried, fermented, charred, steeped, ground, aged, or combined with something unexpected. They may look at how the same pantry staple appears in another cuisine or in an older preparation that is no longer common. One observation leads to a test, and one test usually produces another question.
That is where possibility begins to multiply.
Much of this work remains invisible. By the time a chef presents an idea that seems simple or surprising, the research, failed attempts, conversations, tastings, and notes that produced it are usually hidden. The finished result can make creativity look effortless, even when it is the outcome of sustained attention.
This is also why ordinary ingredients are often so revealing. Their familiarity removes some of the spectacle. The cook cannot rely on rarity or novelty alone. They have to find interest through treatment, context, contrast, timing, and intention.
A useful practice is to choose one pantry staple you think you already understand and study it as though it were unfamiliar. Look at how it is used elsewhere. Taste different versions. Record what changes under heat, moisture, pressure, time, or fermentation. Then choose one observation and test it.
Hidden possibilities are not usually hidden because the ingredient is withholding them.
They remain hidden because we have stopped asking questions.
