How do you move from a vague point of culinary inspiration to a concrete, workable recipe formula?
The first thing to understand is that inspiration is not yet a formula.
An idea can be exciting, suggestive, and full of potential, but until you begin working with it, most of what surrounds it is still speculation. You can imagine several directions, compare possibilities, and convince yourself that the idea is worth pursuing, but eventually the only way forward is to begin testing.
Before that, however, the point of departure needs to become more precise.
A vague thought such as “I want to make an interesting mayonnaise” does not yet tell you enough. Interesting in what way? Are you trying to remove eggs, avoid seed oils, introduce smoke, build acidity differently, or create a version that can withstand service conditions? The clearer the question, the easier it becomes to decide what to research, which ingredients to select, and what kind of experiment to design.
This is where the process begins to take shape.
You gather relevant references. You identify the ingredient families, techniques, and structural principles involved. You decide which variables matter and which ones should remain stable. Then you begin testing, one controlled variation at a time.
Suppose the point of departure is an egg-free mayonnaise. The question immediately opens several areas of inquiry: which fat will form the base, which ingredient can provide emulsification, how acidity will be introduced, what texture is required, and how stable the result needs to be. The original inspiration becomes workable because it has been translated into technical questions.
The same applies to something more open, such as developing a series of infused mayonnaises. You still need to define what kind of infusion, what intensity, how the aromatic element will enter the formula, and whether it affects texture, stability, or shelf life.
As you test, you document proportions, methods, observations, and outcomes. Each result tells you what to repeat, what to change, and what to abandon. Gradually, the idea begins to lose its vagueness and acquire structure.
A formula is not simply a recipe that tastes good. It is a result that can be understood, repeated, evaluated, and connected to the larger purpose of the work.
The movement is therefore simple, even when the process is not: clarify the question, research the structure, test deliberately, document the results, and refine what proves valuable.
An idea becomes concrete when it enters the kitchen and begins producing evidence.
