DESCRIPTION

Red Berries Sugar is a fruit-driven finishing sugar designed to deliver both visual vibrancy and layered berry acidity in cocktail and dessert applications. Built on a medium-grain sugar base, it integrates four distinct berries to create a profile that moves from immediate sweetness into a structured, lively tartness.

Strawberry forms the front-facing character of the blend, providing recognizable sweetness and a round fruit entry point. Raspberry and cranberry introduce sharper acidity, lifting the profile and preventing it from becoming overly soft or confectionary. Blackberry anchors the blend with a deeper, slightly darker fruit tone, adding dimension and extending the finish.

Rather than functioning as a simple flavored sugar, this formula behaves as a balancing tool. It enhances fruit-forward cocktails by reinforcing aroma while simultaneously introducing contrast through acidity. The result is a finishing element that is both decorative and structurally active in the drink.

METHOD

Ensure all fruit components are fully dehydrated before processing.

Grind each berry separately to control particle size and prevent uneven moisture release.

Combine with medium-grain sugar and mix until evenly distributed.

Maintain a medium crystalline texture with fine berry powder integration throughout the matrix.
