Green Olive Almond Tapenade Recipe | Mediterranean Olive Spread

DESCRIPTION

Green Olive & Almond Tapenade is a Mediterranean-style olive paste that combines the bright character of green olives with the richness of almonds preserved inside the olives themselves.

Unlike many tapenades that rely primarily on olives and capers, this version incorporates almonds that have softened during brining, allowing their oils and flavors to integrate with the olives. This produces a deeper and rounder flavor profile than a typical olive paste.

The addition of Mediterranean herb blends and black lemon introduces herbal and citrus layers that elevate the overall aromatic complexity. Olive oil brings the mixture together into a cohesive paste while preserving the natural character of the olives.

Tapenades are traditionally used as spreads or appetizers, but they are equally valuable as flavor bases in cooking. Their concentrated saltiness and umami allow them to function as seasoning pastes that can enrich sauces, marinades, fillings, or roasted vegetables.

This particular tapenade maintains a slightly coarse texture, allowing the olives and almonds to remain perceptible and providing a more dynamic flavor release when eaten.

Covering the surface with a thin layer of olive oil can help preserve freshness.

METHOD

Drain the olives and roughly chop them together with the almonds.

Transfer the mixture to a food processor, mortar, or chopping board and process until a coarse paste forms. The texture should remain slightly chunky rather than completely smooth.

Add olive oil, Mediterranean Blend No.1, Mediterranean Blend No.2, and black lemon powder. Mix thoroughly until evenly incorporated.

Adjust texture if necessary by adding a small amount of olive oil.

Store the tapenade in a sealed container in the refrigerator.

NOTES

Tapenades can vary widely in texture depending on the preparation method. They may be finely blended into a smooth paste or left intentionally chunky to preserve the identity of the ingredients.

Green olives tend to provide brighter and sharper flavors than black olives, which are generally deeper and more robust. This gives the tapenade a fresher and more aromatic profile.

The almonds inside the olives absorb brine during preservation, softening their texture and allowing their oils to integrate with the olives. This produces a naturally cohesive paste once processed.

Because olives are already salted during preservation, additional salt is usually unnecessary.
