SALT OF SALTS No.2 // Foundational Finishing Salt Blend

FORMULA-SLT-002

DESCRIPTION

Salt of Salts No.2 is a finishing salt designed to deliver texture, visual contrast, and layered mineral expression. Unlike cooking salts, which integrate into food, this blend is intended to remain perceptible — both on the palate and visually.

The structure is built around Maldon sea salt flakes, whose large, delicate crystals provide a clean salinity and a distinctive brittle texture that dissolves quickly upon contact. This is complemented by Alaea red Hawaiian salt, which introduces mineral depth and a subtle earthiness derived from its natural red clay content. Black lava salt adds further contrast, contributing both visual intensity and a mild smoky-mineral character from activated charcoal.

The interplay between these salts creates a dynamic sensory experience: some crystals dissolve instantly, enhancing flavor, while others remain intact momentarily, delivering a light crunch and delayed salinity.

This blend is designed for final application, where salt becomes part of the presentation and eating experience. It enhances not only taste but also texture and visual composition, making it particularly effective in simple preparations where finishing details matter.

FORMULA

Ingredients

Maldon sea salt — 50%
Alaea red Hawaiian salt — 25%
Black lava Hawaiian salt — 25%

(Proportions by weight)

TOTAL FORMULA WEIGHT

Variable (based on batch size)

Storage

Airtight container, dry environment.

Optimal texture window:
Indefinite (if kept dry)

Maximum storage:
Indefinite

(Humidity may affect flake integrity over time)

METHOD

Combine salts gently to avoid breaking Maldon flakes.

Do not grind or compress.

Store in a dry environment to preserve crystal structure.

APPLICATIONS

Optimized for:

• Finishing grilled meats and vegetables
• Freshly or toasted bread with butter or olive oil
• Simple dishes where salt remains perceptible

Also suitable for:

• Toasts and spreads
• Raw preparations / Meats or Vegetables
• Roasted vegetables
• Plated dishes requiring visual contrast

Best use:
Final seasoning where texture, crunch, and visual impact are desired.

NOTES

Crystal size variation is essential to the experience — avoid crushing.

Activated charcoal in black lava salt contributes visual depth more than dominant flavor.

Alaea salt introduces mineral complexity and subtle earthiness.

Version: 1.0

Experimental Uses

• Citrus zest finishing salt variation
• Herb-infused finishing salt adaptation
• Smoked Maldon integration
• Sweet applications (caramel, chocolate finishing)

Photo Observation

The blend presents a striking contrast of crystal forms and colors: large, translucent Maldon flakes interspersed with fine black and red mineral salts. The irregular distribution creates a visually dynamic composition, while the variation in crystal size reinforces its tactile complexity. The overall appearance is bold, natural, and highly expressive, signaling its role as a finishing element.

Interpretation

The blend is dominated by textural mineral salinity, where Maldon flakes define the primary structure through their large, fragile crystals. Alaea and black lava salts support the structure by introducing mineral depth and subtle earthy-smoky undertones derived from clay and activated charcoal.

The contrast between crystal types regulates the experience, creating both immediate dissolution and intermittent crunch. The result is a finishing salt that enhances flavor, adds tactile complexity, and delivers strong visual impact at the final stage of plating.
