DESCRIPTION

Mesoterráneo Blend No.1 is a powerful condiment blend that brings together ingredients from two culinary worlds: the Mediterranean and Mesoamerica. The name reflects this meeting point, combining the Mediterranean tradition of sun-dried tomatoes with the deep chile culture of the Americas.

The blend is composed of equal parts sun-dried tomato powder, chile guaque (known as chile guajillo in Mexico), and chile pasa (known as chile pasilla). Each ingredient contributes a distinct dimension to the overall profile.

Sun-dried tomatoes provide a concentrated umami backbone with natural sweetness and acidity. The dried chilies introduce depth, warmth, and complex earthy notes that build structure without overwhelming heat.

Together these three ingredients create a seasoning that is both simple and extremely versatile. Despite its minimal composition, the blend functions as a powerful flavor enhancer that can integrate into many culinary preparations.

Because the ingredients are already deeply developed through drying, the blend delivers intense flavor even in small quantities. Its profile pairs especially well with olive oil, tomato-based dishes, marinades, and slow-cooked preparations.

METHOD

Remove stems and seeds from the dried chilies before grinding.

Grind the chilies separately until a medium powder texture is achieved, then combine them with the sun-dried tomato powder in a large bowl. Mix thoroughly to ensure even distribution.

Avoid grinding the mixture into an extremely fine dust. A slightly coarse texture preserves aromatic complexity and provides a more dynamic flavor release during cooking.

Store the blend in an airtight container away from light and heat.

APPLICATIONS

Flavor Base (Sofrito / Recado)
Add to sautéed onions, garlic, and oil to build a deep flavor base for sauces or stews.

Tomato-Based Dishes
Enhance tomato sauces, stews, and braised dishes with added depth and warmth.

Marinades
Mix with olive oil, citrus juice, vinegar, or fermented beverages such as chicha de jora to marinate meats.

Grilled Foods
Sprinkle over grilled meats or vegetables toward the end of cooking to prevent burning.

Cheese and Toasts
Combine with olive oil or salt and sprinkle over melted cheese or toasted bread.

Bread Doughs
Incorporate into savory breads or focaccia for a rich aromatic crust.

NOTES

Although the formula is simple, ingredient quality strongly affects the final result.

Sun-dried tomatoes must be fully dehydrated before grinding. If moisture remains, the mixture can turn into a paste rather than a powder.

For the best flavor, remove seeds from the chilies before grinding. Seeds can introduce bitterness and unwanted harshness.

The blend can be adjusted in texture depending on the intended use. A slightly coarse grind works well for finishing dishes, while a finer grind integrates more smoothly into sauces or marinades.

Because the ingredients already contain natural sugars and deep roasted flavors, the mixture can burn quickly when exposed to high heat. When grilling or roasting, it is best added toward the end of cooking.
