Savory Sumac & Black Lemon Spice Blend for Cheese, Yogurt & Butter

DESCRIPTION

Botanical Blend No. 3 is a savory and tangy spice composition built around the interaction of coriander seed, sumac, black lemon, and celery seed. Although coriander is the largest component by weight, the distinctive aromatic signature of the blend is shaped primarily by celery seed, whose potent herbal character emerges clearly once the spices are ground.

Sumac contributes a bright, lemon-like acidity that brings freshness to the mixture, while black lemon introduces deeper fermented citrus notes with subtle bitterness. Together these two ingredients create a layered citrus profile that balances the herbal intensity of celery seed.

The result is a spice blend that feels vibrant yet savory, with an aromatic structure well suited to dairy-based preparations. Its acidity and herbal character integrate particularly well with fresh cheeses, yogurt, butter, and creamy soups.

Because celery seeds often remain partially intact even after grinding, small fragments can release bursts of aroma when chewed, adding texture and moments of concentrated flavor within a preparation.

Botanical Blend No. 3 sits comfortably in culinary contexts inspired by Mediterranean and Middle Eastern flavor profiles, especially where acidity, herbs, and dairy interact.

FORMULA

Ingredients

Coriander seeds — 15 g
Sumac — 5 g
Black lemon (dried lime) — 5 g
Celery seeds — 5 g

Total Formula Weight

30 g

Storage

Stored in an airtight container in a cool dry place:

Optimal flavor window:
3–6 months

Maximum storage:
Up to 1 year

METHOD

Grind all ingredients together in a spice grinder until a medium-fine texture is achieved. Transfer the mixture to a bowl and mix thoroughly to ensure even distribution.

Because celery seeds are very small and dense, some fragments may remain slightly larger than the other spices. This creates occasional bursts of flavor when the blend is eaten, which contributes positively to its sensory complexity.

Store the blend in an airtight container away from light and heat.

APPLICATIONS

Fresh Cheese Seasoning
Mix into cream cheese, ricotta, or fresh goat cheese to create an aromatic spread.

Yogurt Sauces
Add to yogurt-based sauces or dressings, particularly those paired with cucumbers or vegetables.

Compound Butter
Blend into freshly churned butter to produce an aromatic butter for bread or roasted vegetables.

Creamy Soups
Sprinkle into celery root, Jerusalem artichoke, or other creamy vegetable soups.

Bread Spreads
Combine with fresh cheese and olive oil to create spreads for sourdough or rye bread.

NOTES

Although coriander is the largest component in the formula, celery seed provides the dominant aromatic signature due to its high potency.

Sumac and black lemon introduce two different forms of citrus acidity:
• sumac delivers bright, fresh tartness
• black lemon contributes deeper fermented citrus notes

Together they create a balanced acidic structure that pairs especially well with dairy.

Experimental Uses

Potential directions for further exploration include:

• aged cheese experiments incorporating the spice blend
• yogurt-based dipping sauces for vegetables
• savory spice crusts for roasted vegetables
• compound butter for grilled fish or poultry
• savory spice oil infused with the blend

Photo Observation

The darker reddish tones visible in the blend come primarily from sumac, while the lighter fragments correspond to crushed coriander and celery seeds. The slightly uneven texture reflects the different densities of the ingredients, particularly the celery seeds, which tend to retain small intact fragments even after grinding.
