FORMULA-SLD-RIM-001// BERRIES SALT
fruit-forward finishing salt designed for both cocktail and culinary applications
DESCRIPTION
Berries Salt is a fruit-forward finishing salt designed for both cocktail and culinary applications. Built on a base of medium-grain salt, it incorporates dehydrated red berries to create a visually striking and aromatically expressive blend.
The combination of cranberry, raspberry, strawberry, and blackberry produces a layered fruit profile that balances sweetness, acidity, and light tannic notes. Sugar is incorporated to soften the sharpness of the dried fruits and round out the salinity of the salt.
This blend is particularly effective in applications where adhesion, color, and aromatic lift are important. It performs equally well in cocktail rimming as in finishing grilled proteins, vegetables, and fresh cheeses.

Dried Cranberry — 15 g
Dried Raspberry — 15 g
Dried Strawberry — 25 g

Optimal flavor window:
4–6 months
Maximum storage:
6–8 months (fruit aroma gradually softens)
METHOD
Ensure all berries are fully dehydrated before processing.
Grind the dried fruits to a coarse consistency, maintaining visible fragments rather than a fine powder.
Combine with medium-grain salt and sugar.
Mix thoroughly until evenly distributed while preserving a non-uniform, natural appearance.
The final texture should remain coarse and crystalline, allowing for adhesion and visual contrast.
APPLICATIONS
Cocktail Rimming
Ideal for glass rims in daiquiris, gin-based drinks, tequila, and mezcal cocktails.
Grilled Poultry & Pork
Use as a finishing salt for grilled chicken and pork chops.
Charred Vegetables
Enhances roasted or grilled vegetables with a sweet-acidic contrast.
Fresh Cheeses
Pairs well with goat cheese and other soft cheeses.
Cold Fruit Pairings
Works as a seasoning for watermelon and other fresh fruits.
NOTES
The sugar component moderates berry acidity and balances overall salinity.
Higher berry ratios may increase clumping due to moisture retention.
Medium-grain salt is preferred for optimal adhesion and texture, particularly in cocktail applications.
Version: 1.0
EXPERIMENTAL USES
• smoked salt variation
• freeze-dried berry version
• reduced sugar formulation
• integration of citrus zest
• use in dessert finishing salts
Photo Observation
The blend presents a pink-to-crimson salt matrix with visible dark berry fragments. The distribution is intentionally irregular, enhancing its artisanal character. The coarse grain structure supports both adhesion and visual contrast.
