DESCRIPTION

Berries Salt is a fruit-forward finishing salt designed for both cocktail and culinary applications. Built on a base of medium-grain salt, it incorporates dehydrated red berries to create a visually striking and aromatically expressive blend.

The combination of cranberry, raspberry, strawberry, and blackberry produces a layered fruit profile that balances sweetness, acidity, and light tannic notes. Sugar is incorporated to soften the sharpness of the dried fruits and round out the salinity of the salt.

This blend is particularly effective in applications where adhesion, color, and aromatic lift are important. It performs equally well in cocktail rimming as in finishing grilled proteins, vegetables, and fresh cheeses.

Maximum storage:
6–8 months (fruit aroma gradually softens)

METHOD

Ensure all berries are fully dehydrated before processing.

Grind the dried fruits to a coarse consistency, maintaining visible fragments rather than a fine powder.

Combine with medium-grain salt and sugar.

Mix thoroughly until evenly distributed while preserving a non-uniform, natural appearance.

The final texture should remain coarse and crystalline, allowing for adhesion and visual contrast.

Ideal for glass rims in daiquiris, gin-based drinks, tequila, and mezcal cocktails.
