When the expected result is not happening, I do not begin by assuming that the staff, the manager or the system has failed. I begin by understanding what is already working, what the restaurant is trying to accomplish, and where expectations, communication and daily practice are no longer connecting.

I listen to ownership and management, observe how kitchen and service work, and clarify what the restaurant is trying to deliver to its guests.

I look at how expectations are communicated, how managers reinforce them, how employees understand their roles, and what actually happens during service.

Turn expectations into daily practice

I work with managers and teams to make responsibilities, routines and operating priorities clearer, then observe how they are applied and refine what is not working.

I do not work from a generic chain manual. Every restaurant has its own identity, service model, management structure, team, resources and pace.

My approach is consistent, but the training and implementation are adapted to the reality of the restaurant and the people responsible for carrying it forward.

My approach comes from working across the restaurant as a chef, instructor, consultant and operator. I have supervised and trained culinary interns in professional European kitchens and served as General Manager and CEO of a restaurant group in Guatemala, overseeing 60 employees across kitchen, service, management, training, quality control and operational systems. More than two decades of education and mentorship have shaped how I listen, communicate and help people translate knowledge into practice.
